Simple and Quick Morning Granola
This is the easiest and most delicious granola recipe I’ve ever made! I’ve been making this recipe now for over a year and it is husband-approved too! It’s simple and low sugar, but you can jazz it up with whatever mix-ins you or your family prefer. I don’t know about you, but I love a customizable recipe!
This recipe has been adapted from Cookie + Kate which I have played around with for over a year now. Just adding some of my sustainability tweaks.
Ingredients:
4 cups old-fashioned oats
1 1/2 cups raw nuts or seeds (I like to use up whatever is in my pantry, but pecans and pepitas are my favorite combination)
1 tsp seal salt
1/2 tsp cinnamon
1/2 cup melted coconut oil
1/2 cup maple syrup, honey, or agave
1 tsp vanilla extract
Optional mix-ins:
2/3 cup dried fruit (cranberries, apricots, raisins, dates)
1/2 cup chocolate chips, peanut butter chips, coconut flakes, candied ginger, cacoa nibs
Instructions:
Preheat oven to 350 degrees F (175 degrees C) and line a large rimmed baking sheet with parchment paper (it makes clean up a breeze)
In a large bowl, combine oats, nuts and/or seeds, salt, and cinnamon and mix
Pour oil, maple syrup, and vanilla in oat mixture until coated and pour granola mixture onto baking sheet and spread into an even layer
Bake until lightly golden brown about 21 to 24 minutes
stir halfway through (for “clumpy” granola, press granola down with a spatula for an even layer)
Let the granola cool completely (about 45 minutes) before mixing in optional dried fruit, etc.
this is the hardest step in the entire recipe
If you want large “clumpy” granola, break granola pieces with your hands. If this is not your desired texture, just give it a good mix with your spoon before storing.
Store in an airtight container on your countertop for 1-2 weeks (I would be shocked if it lasts this long though!)
Serving:
My favorite way to enjoy this is on top of a bowl of warm oatmeal in the morning. However, this would also be delicious all by itself with some milk, in a parfait, or on top of some vanilla ice cream.
Sustainability tips:
Look for parchment paper that is compostable, it will tell you right on the box
Reusable parchment paper is also an option and is often sold in your local grocery store
Buying your oats and mix-ins in bulk is one of my favorite things to do! That way you don’t have all the extra packaging and leftover nuts and dried fruits sitting in your pantry for months as well.
