ROSÉ LEMONADE POPSICLES

IT'S SERIOUSLY SO DANG HOT. This is by far, my favorite boozy pop for summer, perfect as the dessert course for hot summer night dinner parties with friends (we have done this before and it was a hit!), girls brunch on the weekends, or lounging outside by the pool. It's seriously such a refreshing combination not only as a popsicle but also as a cocktail. The sweet citrus flavors are just so refreshing, trust me.

My husband and I love this combination so much, it was actually one of the two specialty cocktails we offered at our wedding! Our guests seriously loved it and it was served with a strawberry and lemon garnish.

Just use the recipe below and don't freeze it. BAM, you've got the most delicious, easiest cocktail that's sure to be a success!

TOOLS (recommended):
Stainless Steel Popsicle Molds (I use these)
*they freeze extra fast in stainless steel molds if you ever need them quickly!

INGREDIENTS:

  • 1 bottle rosé wine

  • lemonade

  • fresh or frozen fruit, if desired

  • Substitute the lemonade and rosé with this if you're hoping to make this popsicle without the booze


INSTRUCTIONS:

  1. Pre-fill popsicle molds with water and pour into a liquid measuring cup to determine the amount of liquid needed to fill your molds. Mine requires 2 cups for 6 popsicle molds.
    *empty liquid measuring cup and use the water to give your houseplants or garden a drink.

  2. Make your mixture of 50% wine and 50% lemonade and give it a good stir, EASY!
    for me the recipe is:
    1 cup rose wine
    1 cup lemonade

  3. Fill your popsicle molds leaving some room for the mixture to expand as it freezes.
    *To make it extra fancy add some fruit (strawberries or raspberries would be beautiful!)

  4. Freeze your pops for at least 4 hours.


SERVING:

  • To release them from the molds you may need to run them under warm water for a few seconds.

 

SUSTAINABILITY TIPS:

  1. Look for a sustainable rose wine (this one is wonderful not only for popsicles, and wonderfully priced)

  2. If you make homemade lemonade, use the squeezed citrus halves to wipe down your sink with a little sprinkle of baking soda before composting. It's a natural cleaner and leaves it smelling beautifully.
